Homemade Apple Cider
A super easy and customizable alternative to store-bought apple cider. As written, this cider is very lightly spiced, but you can amp up the flavors by continuing to steep the add-ins while storing in the fridge. This makes a great standalone drink either cold or warm and can be used as an easy cocktail mixer with any dark liquors.
Instructions
Pour apple juice into a saucepan and bring to a simmer, uncovered. Simmer gently until reduced in volume by approximately 10%.
Add spices and ginger and continue simmering, uncovered, until reduced to 75% of the original volume.
Turn off the heat and stir in the lemon slices. Cover and let cool to room temperature.
Strain the cider and refrigerate until ready to enjoy.

64 oz not-from-concentrate apple juice
2 cinnamon sticks
1 star anise
5 cloves
5 cardamom pods
2 - 3 inches fresh ginger, sliced
1 lemon, sliced
